According to Sam, in Brittany, Pollack are the king local sea fish, especially when you consider it is the biggest of the sustainable line-caught species with big 'tasty' specimen fish falling to those who understand their behaviour. To catch big pollack it is best to fish from a boat. Best tactics are to drift over rock piles and wrecks with perks (spoons), large rubber twister tail grubs, lead-headed soft baitfish imitations and other naturalistic lures.

Bait fishing can be productive as well with cut mackerel and locally-picked shellfish from the beach being popular morsels for pollack. On a pollack fishing trip you can also catch cod, ling, gurnard, wrasse, and other species. Cooked fresh or smoked, the pollack is a delicious alternative to other sea fish which are experiencing population concerns.
